Vegetable Pulao
Ah the smell of Basmati. Smells like Culinary Wonderland.. And me Alice. My fantasies can be pretty up there as you can see :) I usually use only whole grains but I didn't have Brown Basmati. Pulao's are not difficult to make. They are aromatic,light and flavourful. With a Vegetable Pulao you can throw in pretty much an Vegeatble you fancy! Great way to eat your veggies as well.
Things you need:
1 Bay leaf
2 Cloves
2 Cardamoms
2 inch piece of Cinnamon
1/2 tsp Cumin seeds

1/2 cup of Basmati Rice ( pre soak for 1/2 hour)
Mixed veggies of your choice. I have used 1/4 fresh peas, 1 cup cauliflower, 1/2 cup of chopped carrots. Add more if you want!!
1 Onion finely chopped
1 tsp Oil
1 cup of water
1 tsp Himalayan Salt
Heat up the oil. Add the Cumin seeds and other Aromatics( the first section of Ingredients)
Add the chopped Onions. Stir. Enjoy the gorgeous aromas enveloping your kitchen right about now. Add the veggies. Mix. Now in goes the rice. Pour in the water and salt. Stir well. Bring to boil, then simmer and cook for 20 to 25 minutes. Check to see if it's done and let the Rice sit for some 10 minutes and cool. Then fluff.
Optional- you can add some coriander as well, before or after cooking.
Seared Eggplants
I am obsessed with Eggplants. Obsessed. I want to eat them all the time! This one is easier than simple.
Cut the Eggplant in two diagonally. Now make slices. They shouldn't be too thin or too thick. Salt them and let them drain. Squeeze out the excess water. In a bowl or plate mix 1 tsp Turmeric, 1/2 tsp Cumin Powder, 1 tsp Chillie powder. Mix these together. Add the Eggplant slices to this and make sure they are well coated. Heat up 1 tsp oil in a pan and sear the Eggplant slices about 6 ins on each side. Make sure not to burn them and they should be soft and squishy when done.
Indian Rice or Roti meals always has vegetable sides. Always.
Optional- you van dredge them in Bread Crumbs as well.
This made for a very satisfying meal :)
